Recipes–Teriyaki Chicken

You may think it weird to post this in the middle of my 31 day series, but I’m making this for dinner and it smells so good.  It is also so easy and you need to add it to your meal rotation.

This is a great freezer meal and is tasty enough to serve to guests.  Several of our guests have asked for the recipe after eating it.  The chicken is so moist, mmmm!

Teriyaki Chicken (from Once-A-Month Cooking: A Proven System for Spending Less Time in the Kitchen and Enjoying Delicious, Homemade Meals Every Day)

1/2 cup soy sauce
1/2 cup sugar
1 1/2 Tbs. red wine vinegar
2 tsp. vegetable oil
1 small minced garlic clove
3/4 teaspoon ground ginger
1 lb. boneless, skinless, chicken breasts

-Mix soy sauce, sugar, vinegar, oil, garlic, and ginger to make the marinade.

To Freeze: Put chicken into a 1 gallon Ziploc bag and pour marinade over. Freeze flat.

To Serve: Thaw chicken. Pour chicken and marinade into a baking dish. Bake at 350 F for 35 minutes. Serve over rice.
